April Fruit Salad

Ingredients

  • 1 orange, squeezed
  • 1 lime, squeezed
  • 2 passionfruit
  • 2 tablespoons caster sugar, or to taste
  • 1 nashi
  • 1 punnet baby kiwifruit or blueberries (if available)
  • 2 feijoas
  • 1 large banana

Method

At least an hour before serving put the orange and lime juice, passionfruit pulp and sugar in a glass bowl, stir and set aside.

Up to half an hour before serving, quarter, core, peel and finely slice the nashi and add to the bowl. Stir to coat the nashi slices. Add the baby kiwifruit, halved around the equator, or the standard kiwifruit, peeled and thickly sliced.

Just before serving, thickly peel and slice the feijoas, and peel and slice the banana and add to the bowl.

Comment

Every month, there is a different perfect fruit salad just waiting to be made using fresh fruit at the peak of its season, although bananas are welcome all year round because there is nothing else that can make equal their softness and mildness.  Mix the juices and sugar ahead of time so that the sugar has time to dissolve.
