Kingfish Ceviche

(Serves 4, or can be served as part of a shared meal such as a BBQ)

Ingredients

  • 500 gms kingfish fillet
  • 100 ml lime juice
  • 100 ml coconut milk
  • 1 avocado, diced
  • 2 bird’s eye chillies, sliced
  • bunch coriander, leaves only
  • bunch Thai basil, leaves only
  • 4 kaffir lime leaves, julienned (extra for garnish)
  • 4 shallots, sliced
  • banana leaves for serving

Method

Remove the skin, bones and blood line from the kingfish and slice thinly.

Mix with the lime juice and coconut milk, then add the other ingredients.

Form into four small mounds on banana leaves. Top with a little julienned lime leaf.
