Mascarpone

Ingredients

  • 300 g tofu
  • 1 tablespoon cider vinegar
  • 2 tablespoons lemon juice
  • One-third cup of icing sugar
  • 1 and a half teaspoons of xanthan gum
  • 1 tablespoon vanilla paste (or one and a half teaspoons vanilla extract)
  • 1 and a half teaspoons of flaky sea salt
  • 6 tablespoons melted coconut oil

Method

Add all ingredients to a blender and blend until very smooth.

Chill overnight, mix again thoroughly and serve
