Shellfish a la Portable Camping Stove

If you are camping on the coast, buy green-lipped mussels or if you are adventurous, go and get your own pipi.

Ingredients

  • cockles/mussels/pipi
  • 1/2 white onion, chopped
  • 1 garlic cloves chopped
  • 1 large glass of white wine (feel free to drink the same as you go!)
  • 100 grams butter
  • Chopped parsley (if you can be bothered chopping it - that could be the kids job!)
  • A large pot or pan with lid

Method

On the portable stove put the pot/pan on the heat add a nob of butter, the onion, garlic and sweat for a couple of minutes. Add the mussels, cleaned and washed toss for a minute. Deglaze with the wine and cover with the lid. Keep stirring to bring the mussels at the bottom on the top and vice versa.

Once the mussels open, take them out into a large bowl, leaving as much juice as you can in the pan/pot. Add the remaining butter, parsley and stir until all melted on low heat. You don't want the juice to reduce too much.

Pour over mussels and serve with french stick so you can soak the sauce with.

A perfect match with a sauvignon, a nice pinot gris or a riesling.
