Strawberries Steeped in Syrup

Using this old English recipe, the strawberries are not exactly cooked, but are not quite raw either, and the syrup is prettily pink and delicious. Delicious served with ice cream, lightly whipped cream or yoghurt. Also good with pancakes.

(Serves 4)

Ingredients

  • half cup water
  • half cup sugar
  • 2 punnets strawberries

Method

Put the sugar and water in a small saucepan and bring to the boil.

Lower the heat and simmer for a few minutes while you wash and hull the strawberries. Halve or quarter them if they are very large.

Pile the strawberries into a heatproof bowl. Pour the boiling syrup over the strawberries, then immediately drain the syrup back into the saucepan, leaving the strawberries in the bowl.

Bring syrup back to the boil and again pour it over the strawberries. Again, drain the syrup back into the saucepan, bring to the boil and pour over the strawberries a third time. This time leave the strawberries to steep in the syrup until ready to serve – warm or cool.
