12:15 We're going to 'Māori up' Fortnum & Mason

In 2024 Ngāti Raukawa chef Matt Burgess will bring Māori culinary nous to upmarket London department store Fortnum & Mason, founded in 1707. 

His plan is to host supper clubs at the store with a strong Māori influence. 

The Wellington-born and raised chef has worked in London since the late 1990s and learned his craft alongside kitchen luminaries such as Gordon Ramsay. 

He's since launched his own business, Kaiwhenua, and has built a barbecue hāngī cooker. He spoke to Māpuna producer Tama Muru.
